A little healthy, a little unhealthy- Chickpea poutine

We had a slightly unhealthy dinner tonight with chicken schnitzels and poutine. But I had a great idea, to make this meal a little healthier, by having a chickpea poutine option. To make this an easy meal that my 10 year old could take the lead on, we used a poutine gravy mix. So all that she had to do was add water. Instead of curd cheese, we used partly skimmed mozarella. When the poutine gravy was ready, we poured it over the chickpeas and garnished it with parsley. Very delicious indeed.Image
