Chocolate chip oatmeal cookies

I enjoyed eating a quite a few of these cookies without feeling too guilty this past week. Instead of white sugar I used coconut sugar and I used whole wheat flour instead of plain flour. The cookies were delicious, because of all the chocolate chip. It was certainly a lovely weekend treat and very quick to put together. This cookie dough freezes well. Shape into balls and freeze. When you want some cookies, just thaw and bake.

2/3 cups softenend butter
1/2 cup coconut sugar
1 egg
1/2 tbsp vanilla
1 cup whole wheat flour

1 1/2 cup oats (not quick cooking)
1/2 tsp baking powder
1/2 tsp baking soda
1 cup chocolate chips

1. Beat butter and sugar until well combined
2. Add eggs and vanilla.
3. Add in the rest of the ingredients, except chocolate chips. Mix till well combined.
4. Add in chocolate chips and mix
5. Form into one inch balls and bake at 350 F for about 11 minutes.
