Spicy Shallot omelet

I really wanted something spicy and fast for my dinner tonight to eat with  some leftover rice. The kids had some chicken to eat, but it would not have been enough for the whole family. I love the versatility of eggs.  Eggs are so quick to cook up and there are a variety of things that you can do with them. For my dinner, I decided to make a spicy omelet with shallots, carrots and red pepper.  I used a ready made spicy chili sauce.  You can use anything that is available in the store that you like. A shrimp base spicy chili sauce would work really well too. The result was a quick and delicious meal (for me anyways).


2 eggs, beaten

Pepper, to taste

3 baby carrots, sliced

1/2 red pepper, diced

1 shallot, diced

1 tbsp spicy chili sauce

1 tbsp olive oil



1. Heat pan and add olive oil.

2. To the pan add shallots, red pepper and carrots.

3. Add spicy chili sauce and mix with other ingredients in the pan for a few minutes.

4. Add pepper to the eggs and whisk. Add in eggs to the pan. When the eggs are set, flip over and cook the other side.
