Turkey cutlets

I was inspired by my trip to Nuremberg make a schnitzel type thing for dinner. However, I accidentally took out minced turkey from the freezer.  So I decided to make some turkey cutlets instead. We barbequed the patties and had them for dinner with potatoes and salad. I added some lemon grass and garlic to add a nice taste to the otherwise bland turkey. I used the left over lemon grass stalk to baste the patties with some olive oil while on the barbeque.

500 g minced turkey

1 stalk lemon grass, diced finely. ( I used the first quarter of the lemon grass)

1 tbsp onion powder

1 tsp pepper

1 tsp italian seasoning

1 tbsp hoisin sauce

1 egg, beaten

1 cup panko bread crumbs

1. Mix all the ingredients together.

2. Shape into patties.

3. Coat with breadcrumbs just before putting on the barbeque or grilling. ( Can be baked as well)

4. Barbeque until fully cooked.
