Nasi Kunyit/ Tumeric rice

Nasi Kunyit is usually eaten during special occasions with curry. The traditional nasi kunyit is cooked with coconut milk. This healthier version is just as lovely and can be eaten with any Asian meal. Using a rice cooker, the rice can be cooked very quickly and easily. If you do not have a rice cooker, you can cook it on the stove. You may have to adjust the amount of water. If the rice is not cooked, add a little more water at the end. This nasi kunyit recipe produces lovely results for very little effort.


3 cups uncooked rice, washed and drained

3 shallots, sliced

4 star anise

1 cinnamon stick

2 pandan leaves (optional)

2 1/2 cups water

2 cups chicken broth

1 tsp tumeric powder



1. Pan fry shallots for about 2 minutes. Add star anise and cinnamon stick. Stir fry for a couple more minutes until the shallots are slightly brown.

2. Wash and drain rice. Add rice, tumeric, water, broth, spices, shallots and pandan leaves to the rice cooker pot. Stir well. Cook.

3. Half way through, stir rice again.

4. Garnish rice with cilantro leaves.
