Heavenly double chocolate cookies

These cookies are just delicious.  There are chocolate chunks in them and if you bake them for about 10 minutes, you have a crunchy top and a chewy, brownie like centre. If you like your cookies crunchy, just bake them for a few minutes more. I do not like my baked goods too sweet, so I always put less sugar. I make the batter, shape them and then freeze the batter. When I want to bake up some cookies, I just take them out of the freezer, let them defrost and bake them up. I often do this when I am going to take the kids out for the day. We get to enjoy a little treat while we are doing our activities.

These chocolate cookies, will certainly satisfy any chocolate craving that one might have. It is difficult to stop at one cookie.

Ing:

4 oz butter, softened

4 oz semi sweet chocolate

4 oz semi sweet chocolate chunks (or 4 oz semi sweet chocolate, chopped into chunks)

3/4 cup sugar

2 large eggs

1 tsp vanilla extract

1/4 tsp salt

1/2 tsp baking soda

1 cup flour

1/2 cup cocoa powder

 

Method:

1. Melt butter and 4 oz semi-sweet chocolate over simmering water.

2. Add to sugar and mix.

3. Add vanilla, eggs and mix.

4. Add flour, cocoa powder, baking soda, salt. Mix till well combined.

5. Add chocolate chunks and mix.

6. Roll batter into one inch balls.

7. Bake at 350 F for 11-14 minutes, depending on your oven and how crunchy you want the cookies.
